Sashimi Tuna With Wasabi Avocado


Ingredients:

2 ripe avocados
Juice of 3 limes
1 1/2 tsp wasabi paste
2 tbs good-quality Japanese soy sauce, plus extra to serve
1 tbs olive oil
1 toasted nori sheet, cut into 4 long rectangles
400g best-quality sashimi-grade tuna, cut into 1.5cm cubes
1 tbs black sesame seeds, toasted
1 tbs white sesame seeds, toasted
1 tbs chives, finely chopped
Micro cress or baby salad leaves, to serve

Serves: 4
Preparation time: 20 minutes

Method:

Pulse avocado and the juice of 1 lime in a small food processor or blender until smooth. Stir in wasabi to taste. (It should be a little hot but not overwhelming.) Season.

To make the dressing, whisk together the soy sauce, oil and remaining lime juice in a small bowl. Set aside.

Place a nori rectangle on each plate and spread with a little avocado mixture.

Pile tuna on top of avocado mixture, then drizzle with enough dressing so the tuna glistens. Scatter with sesame seeds, chives and cress, then serve with extra soy.
