Caramelised Banana Crepes


2 eggs
1 cup plain flour
1/4 cup sugar
1 cup milk
1 tblspn melted butter

2 ripe bananas
1/2 cup brown sugar
100g butter
1 cup thickened cream


Combine sugar, eggs and milk, and whisk together. Add flour slowly to prevent lumps forming, and stir to a creamy batter. add melted butter, and refrigerate for half an hour prior to cooking.

In a heavy based frypan, melt butter, add bananas and cook until lightly browned. Add brown sugar and continue to cook until sugar has dissolved. Add cream and blend in well.

Remove bananas from heat and roll into each crepe. Seve with sauce poured over.
