Beef Carpaccio


100g super fresh beef fillet
1/2 red onion, finely chopped
1/2 birds eye chilli
1 tblspn chopped parsley
100ml extra virgin olive oil
1 tsp balsamic vinegar
lemon juice
sea salt
cracked black pepper
parmesan cheese


Thinly slice the beef. Place each slice between 2 sheets of plastic and hit with a mallet until it is paper thin.

Drizzle some extra virgin olive oil on a plate and lay the beef on top. season with sea salt and pepper.

In a bowl mix the onion, garlic, sliced chilli, parsley, balsamic and lemon juice. Pour over beef and allow to sit for a few minutes.

Serve with a small amount of rocket and parmesan salad as a garnish. Garlic or crusty bread works well with this.
