Bacon muffin

Bacon & Cheese Savoury Muffins


200g bacon pieces
2 eggs
1 cup self-raising flour
2 cups grated cheese
1/2 cup milk
1 tspn mustard


Preheat oven to 190C.

Pan-fry bacon pieces until crisp.

Beat eggs in a bowl, adding milk.

Sift flour in to a bowl, add bacon and cheese. Stir in egg mixture and mustard until combined.

Spoon into 10, 1/2 cup non-stick muffin pans.

Bake in preheated oven for 25 minutes until well risen and golden brown.
