Blueberry Muffins


2 cups self raising flour
1 tspn ground cinnamon
grated rind and juice 1 lemon
1/3 cup raw or caster sugar
1 egg
90g butter, melted
1 cup milk
1 cup frozen blueberries

Children of all ages love to make these! A healthy snack for after school sport or for lunch boxes.

Serves: 12


Preheat oven to 180C (fan forced 160C). Lightly grease a 12 cup regular size muffin pan.

Sift flour and cinnamon into a bowl.

Combine the lemon rind, juice, sugar, egg and butter together. Add to the flour together with the milk. Stir in blueberries.

Spoon the blueberry mixture into the muffin pan. Bake for 25-30 minutes or until cooked.

Serve warm or cool and freeze.
