Baked Cod With Leeks &Gouda


Ingredients:

4 cod fillets,150g
2 tblspns olive oil
2 leeks, sliced into thin rings
2 onions, sliced into thin rings
1 tblspn curry powder
120 ml creme fraiche
100g aged Gouda cheese, grated

Serves: 4
Preparation time: 45 minutes

Method:

Heat the oven to 200 degC.

Check the cod fillets for bones and remove with tweezers if required. Any firm white fish can be substituted for the cod if so desired.

Grease an ovenproof dish with some of the olive oil.Layer the bottom of the dish with the leeks and place the fish fillets on top. Season the fish with salt and pepper.

Heat the remaining oil in a frying pan over a medium heat. Saute the onion until it is translucent,add the curry powder and fry briefly (this causes the curry powder to lose some of its bitterness). Stir in the creme fraiche and pour the resuting sauce over the fish. Sprinkle the cheese over the top.

Bake the fish in the oven for 15-20 minutes or until golden brown.
