Chocolate & Banana Muffins
2 cups self raising flour
1/2 cup caster sugar
1/2 cup chocolate chips
1/2 tspn salt
1 cup milk
1 tspn vanilla essence
2-3 mashed bananas
Serves: About 50 mini muffins
Preparation time: 30 minutes
With a fork, stir together in a large bowl the flour, caster sugar, chocolate chips and salt.
In another container, melt the butter, remove from the heat, then add the milk, egg and vanilla and beat well.
Mash and measure the banana and stir them into the liquid. Tip all the liquid mixture into the bowl with the dry mixture. Fold everything together carefully until all the flour is dampened, stopping before the mixture is smooth.
Spray mini muffin tins with non-stick spray. Put about 1/4 cup of mixture into each cup.
Bake at 220C for 12-15 minutes, until muffins spring back when pressed in the centre.
