Potato and Bacon Soup
5 large potatoes
1 large onion
7 rashers lean bacon
dsp freshly ground black pepper
200 ml light sour cream
Roughly chop the onion then brown in a heavy based saucepan with the butter and pepper.
Remove rind and excess fat from the bacon, dice and add to the onions.
Roughly chop the potatoes, add to the pan and then just cover with water.
Bring to the boils and simmer until the potatoes are soft.
Blend with a Bamix (or similar kitchen utensil) adding extra water until a desirable consistency is achieved.
Bring to the boil and simmer for a further 30 minutes.
Just before serving add the light sour cream . Heat (but do not boil) and serve.
Garnish with freshly chopped chives.
