Carrot Cake


2 carrots, grated
1 cup self raising flour
1 tspn baking soda
1/2 cup sugar
1/2 tspn cinnamon
1/2 cup plain flour
200 ml canola oil
1/2 cup golden syrup
3 eggs
1 tspn vanilla essence
250g cream cheese
1/2 cup icing sugar
1/2 tsp vanilla essence - extra


Preheat oven to 170C.

Sift the flours, baking soda and cinnamon.

In a separate bowl place the sugar, oil, syrup, egs and vanilla and whisk until combined.

Put this mixture and the carrots into the dry ingredients and stir until just combined.

Pour the mixture into a 20cm round cake tin and bake for 1 hour.

Mix the cheese, icing sugar and extra vanilla essence together to form the icing and spread on top of cooled cake.
