Kangaroo Tail Stew


Ingredients:

1 Kangaroo tail (with fur on)
1 Large Sweet Potato
2 Onions

Serves: A whole family

Method:

Stoke up the bbq until very hot - whack kangaroo tail (fur still in tact) on hot coal until blackened turning all the time.

When blackened, peel of fur. You are left with the skin on (acts like alfoil).


Dig hole in your backyard, about 12 inches deep.
Place kangaroo tail with sweet potatoes and onions(whole)
in hole and cover.

Cook for 2 hours. Serve with a lovely green salad!
