Beef Fillet With Sour Cream & Shiitakes
1 tblspn oil
4 x 200g fillet steaks
1 medium onion, chopped
1 clove garlic, crushed
200g shiitake mushrooms, thickly sliced
2 tblspns tomato paste
125ml red wine
300ml sour light cream
sea salt & fresh ground black pepper
Heat butter and oil in a large frying pan, add steaks and brown well; transfer to a plate.
Add onions and garlic in same pan and cook, stirring, until onion is tender.
Stir in mushrooms and cook for 3 minutes. Add tomato paste, wine and sour cream and bring to the boil.
Reduce heat, return meat to pan and simmer for 5 minutes.
Season to taste with sea salt and pepper.
Serve with pasta, salad and crusty bread.
